Canestrelli is recognized as a "Traditional Italian Agri-food"(PAT) product of ancient tradition, as they were prepared since the Middle Ages by the guilds of arts and crafts (the guilds) of host manufacturers and were sold in churchyards.
Particularly renowned are the canestrelli from Torriglia, a country town near Genoa, where they are still prepared using the recipe of Maria Avanzino, who in 1820 had begun their production in the" Caffè Torriglia," located on Via Roma.
