How and when to use the mixing glass
A mixing-glass (literally "mixing glass") is a glass cup used in the preparation of cocktails. It is generally graduated and equipped with a spout to pour the liquid it contains into the glasses in which the drink is served. The mixing-glass is suitable for mixing those cocktails that, because they contain particularly delicate ingredients such as distilled spirits, wines and liquors that are not opaque (referred to in jargon as "limpid"), must simply be stirred and not shaken with a shaker.
The technique for using this instrument consists of filling it with ice up to three-quarters of its capacity to cool its walls, then draining off the excess water, pouring in the ingredients, mixing with a long-handled bar spoon (bar spoon) or stirrer, and finally, taking it from the bottom end and helping with the strainer (a tool for holding ice), pouring the contents into glasses.
