Lecite is a vegetable emulsifier based on soy lecithin, ideal for preparing airy textures.It also has an amazing ability to bind impossible sauces.
Characteristics: comes in a refined powder form. Cold soluble. Easily soluble in aqueous media but loses functionality in fatty media. For use in food preparations, limited use (maximum recommended dose 30 g/l).
Ingredients: non-genetically modified soy lecithin.
