THE VASE COOKING
Vasocottura, or "cooking in a jar" as it is called, involves cooking and serving food directly in glass jars on the table.
WHAT CAN BE COOKED IN JARS?
Inside the jars you can place virtually anything, season it as desired, and put it into cooking. However, it must be kept in mind that the ingredients inserted must have the same cooking times, since it is NOT possible to open the jars to insert other ingredients once you are up to temperature. If, for example, you want to combine clams with potatoes, it is necessary that the latter be already pre-cooked, otherwise you will find yourself with an inedible dish.
WHAT ARE THE ADVANTAGES OF VASOCOTTURA?
- Since all the ingredients are cooked in a hermetically sealed jar, the flavors are not lost
- The colors of the ingredients are kept vivid, especially those of the vegetables
- For those who like super-fast cooking, jar cooking+microwave works wonders
- Serve dishes directly inside the jars-an incredible dramatic effect
WHAT COOKING DO I USE FOR JARS?
Depending on the recipe you want to prepare, you can microwave the jars for super-fast cooking. Alternatively, you can use the regular oven at medium or low temperature. You can also bake in a water bath, submerging the jars 2/3 of the way in water.
HOW DO YOU STORE FOOD IN GLASS JARS?
If you want to preserve food, be aware that once the jar has cooled, the classic "vacuum" is formed, which helps in no small way with storage. Therefore, your jar can safely stay in the refrigerator for up to 7 days.
FIRST EXPERIMENTS WITH VASOCOTTURA
To become familiar with this type of cooking, it is ideal to start with something as simple as cooking vegetables. Try, for example, artichokes or asparagus; both should be hulled in acidulated water, placed in the jar and seasoned properly with oil and herbs. Cooking will take place in the microwave for 5-6 minutes at a power of 700/800 W.
