COOKING AT HIGH TEMPERATURES

• Its vitrified products are fired in the cookie state at a temperature of 1160° C for more than 24 hours.
• They are then glazed and fired again at a temperature of 1070° C, for another 16 hours.
• The double firing ensures that the cookie changes to a glassy state with an extremely low degree of moisture absorption.
• The second firing seals the cookie with a shiny glaze that is extremely durable and does not absorb moisture, which would weaken it and cause hygienic problems.
