THE RIGHT ICE
Every drink must be made with the right ice. There are some that need larger cubes or spheres for a simple reason: to ensure slow melting, controlling dilution. The larger the piece, the smaller the external surface area in contact with the cocktail, thus preventing too fast a melting. Very small cubes, or even pilé ice, therefore melt much faster.
